Adam’s Quinoa Energy Bars

Our friend Adam is super awesome. He is an amazing photographer, awesome trail running, cycler, mountain biker, and aspiring mountaineer. He is a great cook, awesome in the back country and very artistic. (And ladies… he’s single!) Anyways, enough of the Adam pump up… he made these super sick awesome delcious quinoa energy bars and shared them with me on our trail run. They were DELICIOUS! They are loaded with nutrients and not too sticky to eat while running. They have a high carb content which makes them perfect for ramping on the energy on long runs. And plus, sometimes it’s nice to have some real food on a run instead of eating power bars and energy jels!


Adam’s Super Sick Quinoa Energy Bars:

-200g of uncooked Quinoa
-1.5 cups of Quick Oats
-250g of Dark Chocolate chips
-100g of slivered almonds
-150g of unsweetened medium Coconut
-1\4 cup to 1\2 cut of craisins
-1\2 cup of Crunchy Organic Peanut butter
-150 g of Pure Honey
-1 tbsp vanilla
-1tsp cinnamon
How to make:
-Cook Quinoa (1 part quinoa, 2 parts water, cook to boil, stir and let simmer on low heat until water has evaporated)
-Pre heat Oven to 350
-Mix All ingredence in a large mixing boul.
-Once mixed put into baking dish (about 1 inch thick)
-Place in the oven and let cook for 20 mins
-Once done take out let cool and cut them into desired sizes. (I normaly cut them into 40 bars)
-Place them in the fridge or freezer
and Enjoy…
